Это конечно не очень хорошо, но в целом не критично, что предыдущая специальность несколько, но не кардинально (например, если был историком, а хочешь поступать на квантовую оптоэлектронику, то шансов мягко говоря мало) отличается от той, на которую планируешь идти в магистратуру. Пусть они и не распишут за твои скиллы в программировании, но напишут за свои предметы, что ты был любознателен и старателен в учебе и возможно научной работе, про твои личные качества и тому подобное. Очень желательно, чтобы один из рекомендателей был руководителем твоей дипломной работы. Если работаешь в более менее известной компании программером, и хочешь чтобы тебя именно как программера рекомендовали, то можешь там рекомендацию взять. Но здесь опять же зависит от требований университетов, в одних допускается, чтобы один рекомендатель был из универа, а второй с работы, в других иногда может требоваться, чтобы все рекомендатели были академические.
Вообще говоря, процесс подачи заявок в финские университеты делится на два типа:
1) В большинство университетов через организацию University Admissions Finland (UAF).
2) В некоторые другие университеты через их собственные системы подачи заявок.
Собственно UAF выполняет роль предварительной обработки заявок на поступление. На их сайте ты заполняешь анкету, затем распечатываешь ее и с остальными требуемыми документами отправляешь в UAF, они чекают все ли в порядке с документами и выполнены ли все требования (например, сдан ли языковой экзамен на достаточный бал) и затем перенаправляют документы в университет. Так вот, когда ты подаешь заявку в университет через UAF, там эссе требуется написать в анкете по наводящим вопросам и еще ответить на дополнительные вопросы.

Кстати, тут пока ковырялся в документах вспомнил, что в некоторые вузы рекомендации и не требуются. По-моему как раз в университет Хельсинки и университет Турку они не нужны были. В других случаях просят указать контакты рекомендателей в анкете UAF.
Когда же ты подаешь заявку в универы не через UAF, а через их собственные системы подачи заявок, там нужно чтобы тебе рекомендатели написали рекомендации, распечатали, подписали, положили в конверт, опечатали его и отдали тебе. А ты потом отправляешь со всеми документами. Иногда универы имеют специальные формы для рекомендаций, иногда они пишутся в свободной форме. Что касается эссе, то оно в таком случае пишется в свободной форме. По содержанию да, нужно показать свой неутомимый интерес к университету и выбранному направлению магистратуры, но без излишней лести. Важно делать акцент не только на прошлый опыт, но и на то, как ты видишь себя после окончания университета. По поводу структуры эссе в свободной форме могу порекомендовать использовать так называемое "Five paragraph essay".
Еще совет. Я так понимаю, ты только в следующем году будешь поступать? Если очень хочешь поступать на айтишника, но в предыдущем дипломе ощущается острый недостаток айтишых предметов, то можешь надрочить всякие профильные курсы крутых универов на coursera. Потом укажешь это в эссе или резюме, будет плюсом. Такие словечки как Stanford или Berkeley точно заявку не испортят. Если будет много курсов, законченных с хорошими результатами, то покажешь свою искреннюю заинтересованность в этой области. Важно, чтобы слова в эссе могли быть подтверждены делом, а не быть пустой болтовней.
Кстати, поздравьте меня, аноны. Несколько дней назад меня приняли в университет Хельсинки. Еще жду ответы из университета Турку, университета Тампере и университета Аальто, но скорее всего таки в Хельсинкский универ поеду, он единственный из финских в топ-100 мира все-таки. Кстати, средний балл диплома специалиста, полученного мною в этом году в далеком мухосранском вузике, у меня всего 4.2 из 5 (правда за последние два года учебы 4.9 из 5).
